Char siu sauce is generally used for barbecued pork in Cantonese cuisine. It means ‘fork roast’ so is also ideal for any red meat on the braai, such as this chargrilled fillet of beef.

Ingredients

1 x 600 g piece of beef fillet, whole, trimmed

2 Tbsp char siu sauce

1 tsp sambal oelek

1 tsp soy sauce

1 tsp yuzu paste

600 g beef fillet

Method

Season beef all over with salt and leave to stand in the fridge for a few hours. Mix ingredients together and massage into beef fillet inside a ziplock bag. Marinate for 3 or 4 hours or overnight. Grill in a skillet or braai over hot coals till medium rare or done to your taste. DM/TGIFood
