Origin Coffee is constantly in the pursuit of finding exceptional coffees and the people behind them to showcase to our coffee community. This remarkable and limited release is no exception. Yemeni Coffee is an origin story all on its own, with over 97% of the world's cultivated coffee varieties being traceable to Yemen.

This release finds its roots in the high grounds of Haraaz, Yemen's largest coffee-growing region. This coffee is grown at 2,300 metres above sea level and undergoes a unique fermentation process, which highlights the characteristics of this rare coffee.

### **What is the Alchemy fermentation process?**

This process required considerable curation and concentration to achieve perfection. By combining pressure (specifically up to 10 bar/145 psi), temperature control, gas regulation, and managed drying the product of this process is a unique flavour expression and bean structure.

### **Who is keeping the origin of Yemeni coffee alive**?

The Al Hateeb and Bani Nahimi families are accustomed to growing coffee on edgy cliffs. Generations of mastering how to manoeuvre around seemingly dangerous farming areas come naturally to these first people.

Growing, harvesting and fermenting Haraazi coffee is considered an ancestral craft pursued with the utmost love and care.

An interesting fact about Haraaz is that it was used as a vantage point during Ottoman rule and houses a number of strategic forts that are still accessible. Other key coffee-producing areas in Sana'a are Hayma Dakhiliya, Hayma Kharijiya, Bani Matar, and Bani Ismail. These areas provide a range of altitudes, soil fertility, pockets of ideal microclimates, and rainfall, which are crucial factors that power the growth of high-quality coffee.

Sana'a is also home to Yemen's capital city, which has one of the longest-continuous coffee cultures in the world.
